Guthi Vankaya


This is my most favourite gravy curry. This is also the most traditional south indian dishes made out of brinjal.
Ingridients:-
Brinjals - small purple ones
Peanuts - 1 cup
Seseme seeds - 2 tbspn
green chillies
Onion
Tomato
1. Slit the small purple oinions on the bottom . Take off its stem
2. Now take oil in a pan and fry them in oil. Close the lid so that they brinjal cooks well. Add salt at this point, so that the salk gets into the brinjal
3. Now remove brinjals and add oil and add garlic to it.
4. Add onion to it now
5. As onions are frying, dry fry peanuts and remove their covers. Fry seseme seeds also and grind both of them into a fine paste
6. Now add tomato puree to the onions
7. Add the grinded peanut and seseme powder to this. At this point you have a good brown color masala paste in the pan
8. Now add the fried and cok brinjals and now add little chillie powder to this.
9. Cook for some time and remove it from heat.
Serve hot with rice or chapati.
